Meat Me

My mother in law brought over 40 lbs of ground beef the other day. It joined the 30 lbs still in my deep freeze. I am so grateful for that meat - especially with rising prices. But what does one do with 70 lbs of ground beef?

We've had tacos, chili, spaghetti, lasagna, goulash...any other suggestions?

I might also see if someone wants to buy some chicken breasts and trade me for some ground beef.

Maybe this weeks meals should be entitled, "Ground Beef Served Seven Ways".

I guess the question 'where's the beef?' isn't being asked at your house. :)

Um, how original is this meal idea....meatloaf. :) (my husband doesn't like it so I never have, er, get to fix it) ;)

Hmmm.

Look online at Cooks.com for recipes using ground beef. Maybe something wonderful will just "pop up". Good luck ... and SHARE your results, ok? I need some good recipes also ... I have the REST of the beef up here in Roundup!!

I like to browse around allrecipes.com when I'm stumped. You could also make a jumbo batch of meatballs to freeze for later (I know it's not traditional to use straight beef, but no one's saying you can't :) You could also broil burgers - you can add different spices/sauces to break it up a bit (onions, peppers & teriyaki sauce, for instance). I just finished making meatloaf for dinner, its the best. Ill give you the recipe even though it will only subtract 2lbs from your stash for one pan.
2 pounds ground beef
1 med onion, peeled and finely chopped
1 carrot, same as above
1 stalk celery, finely chopped
4 Tbsp butter
1/4 tsp dried chili flakes
1 tsp dried thyme
1 tsp cracked pepper
1 tsp sea salt
1 1/2 cups cubed stuffing (technically the recipe calls for bread crumbs but i love it with stuffing)
1 cup cream
1 egg

Saute onions, carrots and celery in butter until soft. Add chile flakes, thyme, pepper and salt and stir around.
Meanwhile, soak bread crumbs in cream.
Using your hands mix meat with sauteed vegetables, soaked stuffing, and egg. Form into a loaf and put in a loaf pan.
(I use the one that has holes in it for the grease to drip into) Ice the meatloaf with ketchup or tomato paste.
Put the pan in a glass dish with one cup of water in the glass dish.
Bake at 350 degrees for 1 1/2 hrs.

I wish I could say that I was having your ground beef problem! We are stuck in a chicken rut right now... actually, I am getting sick of buying meat at all. It is so expensive and I never seem to buy enough or have very many options for what to do with it! I will have to check out those websites the others mentioned.

Hey Girl. I know this is an old post but I had an idea and I'm guessing you haven't managed to use up 70lbs of ground beef in two weeks? LOL! How about a cottage pie? Ground beef cooked with a sauteed onion and gravy, baked in a lasagna dish with mashed potatoes on top. I always add frozen peas to the meat mixture for added veg to the meal and serve with another veg on the side. Yummy and different!
